Yields 2 1/2 dozen. Per cookie: 36 calories; 1g protein; 2g fat; 5g carbs
- White of a large egg
- 1/8 tsp. salt
- 1/3 C granulated sugar
- 1/2 C chopped walnuts or pecans
- 1/2 C chocolate chips
- Heat oven to 350 F.
- In medium-sized bowl with electric mixer at high speed, beat egg white & salt until soft peaks form
- Beat in sugar, 1 tablespoon at a time, until stiff and glassy
- Stir in nuts & chocolate chips
- Drop mixture by rounded spoonsful onto foil-covered cookie sheets
- Place in oven, close door.
- Turn oven off, do NOT open door.
- Leave cookies in oven at least overnight.
