All-night Drop Cookies

Yields 2 1/2 dozen.  Per cookie: 36 calories; 1g protein; 2g fat; 5g carbs


  • White of a large egg
  • 1/8 tsp. salt
  • 1/3 C granulated sugar
  • 1/2 C chopped walnuts or pecans
  • 1/2 C chocolate chips
  • Heat oven to 350 F.
  • In medium-sized bowl with electric mixer at high speed, beat egg white & salt until soft peaks form
  • Beat in sugar, 1 tablespoon at a time, until stiff and glassy
  • Stir in nuts & chocolate chips
  • Drop mixture by rounded spoonsful onto foil-covered cookie sheets
  • Place in oven, close door.
  • Turn oven off, do NOT open door.
  • Leave cookies in oven at least overnight.
