Chicken Salad
Makes 2 large serving, or probably 3 or 4 sandwiches.
The base recipe here came from Food.com ( http://www.food.com/recipe/easy-homemade-chicken-salad-105202 ) but I modified it pretty extensively to suit the preferences of Cindy and me.
Ingredients
1 12.5 oz can cooked chicken, drained
1⁄2+ cup sliced celery
1⁄4 cup chopped onion
1/2 medium apple, small cubes
1/2 cup of pecan pieces (coarsely chopped?)
1 dill gherkin chopped
4 thinly sliced black olives
1⁄8 teaspoon pepper
Dash of garlic powder
Even smaller dash of cayenne pepper
1⁄3 cup mayonnaise
2 teaspoons prepared mustard
1 or 2 hard-boiled eggs, chopped
Directions
In medium mixing bowl combine first seven ingredients.
Stir in the spices.
Stir in the mayonnaise and mustard.
Gently stir in the eggs.
Cover and chill until ready to serve.
Serve on bed of lettuce or make a sandwich.
