{"id":141,"date":"2020-03-24T13:06:59","date_gmt":"2020-03-24T17:06:59","guid":{"rendered":"http:\/\/williamson.to\/journal\/?p=141"},"modified":"2020-03-24T13:07:01","modified_gmt":"2020-03-24T17:07:01","slug":"sams-corn-bread","status":"publish","type":"post","link":"http:\/\/williamson.to\/journal\/2020\/03\/sams-corn-bread\/","title":{"rendered":"Sam&#8217;s Corn Bread"},"content":{"rendered":"\n<p>Corn Bread<\/p>\n\n\n\n<p>10&#8243; Corn Bread Loaf<\/p>\n\n\n\n<p>Thanks to grandson Sam for this recipe. <\/p>\n\n\n\n<!--more-->\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>1 1\/2 cups cornmeal<\/li><li>1 cup all purpose flour<\/li><li>1\/3 cup sugar<\/li><li>4 teaspoons baking powder<\/li><li>1 teaspoon kosher salt<\/li><li>2 cups reduced fat buttermilk<\/li><li>1 large egg<\/li><li>6 tablespoons unsalted, melted butter. (Used in two 3-tsp measures.)<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<p>Preheat oven to 425 degrees. Place an oven-proof 10-inch case iron skillet in the oven.<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>In a large bowl, combine cornmeal, flower, sugar, baking powder, and salt.<\/li><li>In another bowl whisk together buttermilk, egg, and 3 tablespoons melted butter. Pour mixture over dry ingredients and stir using a rubber spatula just until moist.<\/li><li>Remove skillet from the oven and add remaining 3 tablespoons butter until heated through &#8211; 1 or 2 minutes.<\/li><li>Working carefully with that hot skillet, immediately scoop the batter into the skillet.
