{"id":87,"date":"2015-06-27T11:46:08","date_gmt":"2015-06-27T15:46:08","guid":{"rendered":"http:\/\/williamson.to\/journal\/?p=87"},"modified":"2015-06-27T12:51:01","modified_gmt":"2015-06-27T16:51:01","slug":"fried-mash-potato-patties","status":"publish","type":"post","link":"http:\/\/williamson.to\/journal\/2015\/06\/fried-mash-potato-patties\/","title":{"rendered":"Fried Mashed Potato Patties"},"content":{"rendered":"<p>Fried Mashed Potato Patties &#8211;<\/p>\n<p>5 to 10 minutes prep; 10 minutes cook<\/p>\n<p><!--more--><\/p>\n<p>Everything is &#8220;more or less&#8221; &#8211; ingredients, and cooking time<\/p>\n<ul>\n<li>1 cup skin-on mashed potatoes &#8211; I prefer taste, texture, and nutrition of skin-on potatoes<\/li>\n<li>1 egg, lightly whipped<\/li>\n<li>salt, black pepper, powdered cayenne pepper, garlic salt<\/li>\n<li>1 tsp all-purpose flower<\/li>\n<li>Bacon bits<\/li>\n<li>Onions, chopped fine &#8211; I prefer fine-chopped, which reduces the texture impact and gets onion flavor more pervasive.<\/li>\n<li>Handful of shredded cheese &#8211; I use mild cheddar.<\/li>\n<li>1 tsp olive oil<\/li>\n<li>small patty butter<\/li>\n<\/ul>\n<p>Lightly whip the egg.<\/p>\n<p>Pour egg into mashed potatoes in a bowl.<\/p>\n<p>Add all-purpose flower, salts, and peppers. The salts and peppers are to taste; I use a few shakes of table salt, a couple of garlic salt, a dash of black pepper, and a dash of cayenne pepper.<\/p>\n<p>Stir thoroughly, adding the bacon bits and cheese.<\/p>\n<p>Heat the olive oil and butter in an omelet pan on medium heat. I initially use slightly over medium initially for the first batch and turn it down to medium about two minutes into cooking. Remember, this is more or less; adjust as needed.<\/p>\n<p>When the oil is hot spoon dough into pan, flattening with the spoon until it&#8217;s about 1\/2 inch thick. I use about 2 tsp per patty.<\/p>\n<p>Cook for about 5 minutes per side.
