Peanut Butter Balls

Makes 3 dozen Peanut Butter Balls

  • 3/4 C. peanut butter
  • 1/2 C. honey
  • 1 tsp. pure vanilla extract
  • 3/4 C. skim milk powder
  • 1 C. oatmeal
  • 1/4 C. toasted sesame seeds*
  • 2 tbsp. boiling water
  • sesame seeds or chopped nuts for coating balls
  •  In a medium sized bowl combine peanut butter, honey, and vanilla extract; blend thoroughly
  • Mix skim milk powder and oatmeal together.
  • Gradually add milk/oatmeal mixture to peanut butter/honey mixture, blending thoroughly, using hands if necessary to mix.
  • As dough begins to stiffen, blend in toasted sesame seeds.
  • Add two tbsp. boiling water to mixture, blending well.
  • Shape into 1 in. balls.
  • Roll in finely chopped nuts or toasted sesame seeds.  (For variety roll have in sesame seeds and half in nuts.)

* Toast sesame seeds in a pre-heated oven for about 20 min. or until lightly browned

Gluten note: Oats are naturally gluten-free, but may be processed in facilities that also process grains with gluten; get oats that are listed as gluten-free if you are particularly sensitive
